I remember this dish very well. I was about 15 years old and my family was visiting the Levy’s in Hillsborough. Claude had labored for two days over this dish. I, in my 15-year-old wish to be thin, announce that I would not be eating dinner. Aunt Claude would have none of it. I did indeed end up eating dinner and found everything truly delicious, as always. I have never seen a Beef Wellington on the menu without thinking about my dear and wonderful Aunt Claude.
